Vegetable Stuffed Chicken
Recipe in English:
Ingredients:
-Cayenne powder 1 & ½ tsp
-Namak (Salt) 1 tsp or to taste
-Onion powder 1 & ½ tsp
-Kali mirch (Black pepper) crushed 1 & ½ tsp
-Cooking oil 2 tsp
-Pyaz (Onion) sliced 1 medium
-Red bell pepper julienne ½ Cup
-Mushrooms (Mhumbi) chopped ½ Cup
-Palak (Spinach) chopped 1 Cup
-Cottage cheese (Paneer) grated ½ Cup
-Chicken fillets ½ kg
-Cooking oil 1 tsp
-Makhan (Butter) 2 tbs
Hollandaise Sauce:
-Makhan (Butter) 100 gms
-Anday ki zardi (Egg yolk) 1
-Lemon juice 1 tbs
-Pani (Water) 2 tbs
-Namak (Salt) 1 pinch
-Kali mirch (Black pepper) crushed 1 pinch
-Pani (Water) 2 tbs
-Fresh parsley chopped
Directions:
-In small bowl,add cayenne powder,salt,onion powder,black pepper crushed and mix well.Spice mix is ready & set aside.
-In wok,add cooking oil,onion and mix well.
-Add red bell pepper,mushrooms,spinach and stir fry for 1 minute.
-Add cottage cheese,½ tbs prepared spice mix,mix well and cook for 1-2 minutes & set aside.
-Use a sharp knife to cut a pocket into the side of each chicken fillet,sprinkle ½ tbs prepared spice mix on both sides of fillets and stuffed with prepared filling and insert tooth pick or skewer to seal the stuffing.
-In frying pan,add cooking oil,butter and let it melt and fry stuffed chicken fillet for 4-5 minutes each side or until golden brown (cover in between).
Prepare Hollandaise Sauce:
-In frying pan,add butter and let it melt,take out in a bowl,rest it for 2-3 minutes and remove milk solids to clarify butter.
-In saucepan,add water and bring it to boil,place another bowl,add egg yolk,lemon juice and whisk well.
-During whisking,add water,salt,black pepper crushed and whisk continuously until it is light & fluffy (approx. 1-2 minute).
-Add water and whisk again.
-Remove from heat,gradually add melted butter and whisk continually until well smooth.Hollandaise sauce is ready!
-On serving plate,place fried chicken fillets,drizzle hollandaise sauce and garnish with fresh parsley & serve!

-Chotay ball mein cayenne powder,namak,onion powder aur kali mirch crushed dal ker ache tarhan mix ker lein.Spice mix tayyar hai & side per rakh dein.
-Karhai mein cooking oil aur pyaz dal ker ache tarhan mix karein.
-Red bell pepper,mushrooms aur palak dal ker ek minute kliya stir fry ker lein.
-Paneer aur ½ tbs tayyar spice mix dal ker ache tarhan mix karein aur 1-2 minute kliya paka lein & side per rakh dein.
-Knife ki madad sa chicken fillet ko beech mein sa cut ker ka pocket bana lein,tayyar spice mix ½ tbs sprinkle karein aur tayyar filling sa stuff ker lein aur tooth pick or skewer laga ker stuffing ko seal ker lein.
-Frying pan mein cooking oil aur makhan dal ker melt ker lein aur stuffed chicken fillet ko 4-5 minutes (each side) ya golden brown hunay tak fry ker lein (bech bech mein cover ker lein).
Prepare Hollandaise Sauce:
-Frying pan mein makhan dal ker melt ker lein aur bowl mein nikal lein,2-3 minutes kliya rest karein aur milk solid particles ko remove ker lein.
-Saucepan mein pani dal ker ubal lein,ek aur bowl rakh ker anday ki zardi aur lemon juice dal ker ache tarhan whisk ker lein.
-Whisking ka doran,pani,namak aur kali mirch crushed dal ker musalsal whisk kertay rahein yahan tak ka light & fluffy hohaye (approx. 1-2 minute).
-Pani dal ker dubara whisk ker lein.
-Chulhay sa hata lein aur melted makhan dal ker musalsal whisk kertay rahein.Hollandaise sauce tayyar hai!
-Serving plate mein fried chicken fillets rakh ker hollandaise sauce drizzle ker lein aur fresh parsley sa garnish ker ka serve karein.

Moist Chocolate Cake
Recipe in English:
Ingredients:
Prepare Chocolate Cake:
-Hot water 1 Cup
-Instant coffee 2 tsp
-Maida (All-purpose flour) 2 & ½ Cups
-Cocoa powder ¾ Cup
-Baking powder 1 & ½ tsp
-Baking soda ½ tbs
-Namak (Salt) ½ tsp
-Bareek cheeni (Caster sugar) 1 & ½ Cup
-Anday (Eggs) 3 (room temperature)
-Doodh (Milk) 1 Cup (room temperature)
-Cooking oil ½ Cup
-Sirka (Vinegar) ½ tbs
-Vanilla essence 2 tsp
-Makhan (Butter) soft
Prepare Chocolate Syrup:
-Cocoa powder ½ Cup
-Bareek cheeni (Caster sugar) ½ Cup
-Water hot 1 Cup
Prepare Chocolate Frosting:
-Chocolate semisweet 400g
-Whipping cream 300ml
-Vanilla essence ½ tsp
-Cocoa powder 2 tbs
Directions:
Prepare Chocolate Cake:
-In hot water,add instant coffee,mix well & set aside.
-In a bowl,place sifter,add all-purpose flour,cocoa powder,baking powder,baking soda,salt & sift together.
-Add caster sugar & mix well.
-Add eggs,milk,cooking oil,vinegar,vanilla essence & beat until well combined.
-Now add dissolved coffee,beat well & set aside.
-Grease 8” round pan with butter & line with butter paper.
-Pour the batter in greased baking pan & bake in preheated oven at 180 C for 40 minutes.
-Take out cake pan from oven and let it cool down.
Prepare Chocolate Syrup:
-In a small jug,add cocoa powder,caster sugar,hot water,whisk well & set aside.
Prepare Chocolate Frosting:
-Place a bowl on double boiler & add semisweet chocolate,whipping cream & whisk well until smooth.
-Add vanilla essence,cocoa powder & whisk until well combined.
-Let it cool,cover & refrigerate for 1 hour.
-Place the bowl on ice bath & beat until soft peaks form (approx. 10 minutes) then transfer to a piping bag.
-Remove cake from baking pan and with the help of the cake knife,horizontally cut three layers of cake.
-Place first layer of cake on cake strand,apply prepared chocolate syrup with the help of brush.
-Now add & spread prepared chocolate frosting with the help of spatula.
-Place another layer of cake and apply prepared chocolate syrup with the help of brush.
-Now spread prepared chocolate frosting & repeat the same process for top layer of cake and cover the sides of the cake with frosting.
-Decorate & chilled until serve!

-Anday,doodh,cooking oil,sirka aur vanilla essence dal ker ache tarhan beat ker lein.
-Ab dissolved coffee dal ker ache tarhan beat ker lein & side per rakh dein.
-8” round pan ko makhan sa grease karein aur butter paper laga lein.
-Greased baking pan mein tayyar batter dal dein aur preheated oven mein 180 C per 40 minutes kliya bake ker lein.
-Cake ko oven sa bahir nikal lein aur thanda ker lein.
Prepare Chocolate Syrup:

Never leave batter for long and do not store it. Use batter within 10-15 mins
Dip jalebis in warm sugar syrup immediately after frying.
Dip in Sugar syrup for 5-10 seconds. Fold in syrup and take them out.

-Paani (Water) 1 cup

-Hari elaichi (Green cardamom) 2-3
-Leemo ka rus (Lemon juice) 2 tsp
For Jalebi:
-Paani (Water) lukewarm 2-3 tbs
-Cheeni (Sugar) 1 tsp
-Instant yeast ½ tsp
-Maida (Flour) 1 cup
-Orange Food color 1 tsp or as required
-Ghee melted 1 tbs
-Baisan (Gram flour) 1 tbs
-Paani (Water) as required
-Desi ghee for frying
Directions:
For Sheera (Sugar syrup):
-In pot,add water,sugar and green cardamom,mix it and cook until syrup thickens.
-In the end, add lemon juice, stir well and set aside.
-Sheera is ready.
For Jalebi:
-In lukewarm water,add sugar and instant yeast,mix & let it sit for 15 minutes.
-In bowl add flour, orange food color,ghee melted,gram flour,yeast mixture,water and make a batter of desired consistency. Let it rest for 10 minutes and consume immediately (within 10-15 minutes).
-Now pour this batter in the sneezing bottle.
-In frying pan, heat desi ghee and squeeze the bottle and make centric rings with the batter.
-When one side is cooked, turn over and fry the other side.
-After frying, immediately put the fried jalebis in the sugar syrup. The sugar syrup should be slightly warm when you add jalebis in it.
-Turn over after a minute so that both sides are coated with the syrup.
-Keep them in the sugar syrup for about 2-3 minutes.
-Remove jablebis with the help of tong and shake lightly so that excess sugar syrup.
-Jalebi is ready to serve.

-Dhania powder (Coriander powder) 1 tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste

-Makhan (Butter) 2-3 tbs
-Lehsan (Garlic) chopped 1 tbs
-Yakhni (Stock) 1 & ½ Cup
-Corn flour 2-3 tbs
-Doodh (Milk) 1 Cup
-Safed mirch powder (White pepper powder) 1 tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Namak (Salt) 1/4 tsp or to taste
-Mixed herbs 1 tsp
-Cheddar cheese grated 1 Cup
-Aloo (Potato) boiled ½ kg
-Anday ki zardi (Egg yolk) 1
-Maida (All-purpose flour) ½ Cup
-Namak (Salt) ½ tsp or to taste
-Maida (All-purpose flour) ½ Cup
-Boiling water as required
-Makhan (Butter) 2 tbs
Directions:
-In saucepan,add butter and let it melt.
-Add garlic and mix well.
-In stock,add corn flour and whisk well.
-Now add dissolve corn flour,milk and whisk well.
-Add white pepper powder,black pepper crushed,salt and mixed herbs,whisk well & cook until sauce thickens.
-Add cheddar cheese,whisk well and cook until cheese melts & set aside.
-In bowl,grate potatoes with the help of the grater.
-Add egg yolk,all-purpose flour and mix well.
-Add salt,mix well and knead until dough is formed.
-Transfer it to a working surface,gradually sprinkle all-purpose flour and knead gently until the flour is fully incorporated and dough is soft and smooth.
-Divide the dough into flour equal part.
-With the palms of both hands,roll the dough on floured surface into a rope about 3/4 inch in diameter.
-With the help of the cutter and cut into crosswise square gnocchi (1 inch).
-To shape the gnocchi hold a fork in one hand and place a gnocchi pillow against the tines of the fork, cut ends out.Use your thumb and press in and down the length of the fork.
-In wok,add water and bring it boil,add gnocchi pasta and boil for 1 minute or they rise to the top then drain & set aside.
-In wok,add butter and let it melt,add gnocchi pasta and fry until golden brown.
-On serving plate,add cooked gnocchi pasta,prepared cheese sauce and garnish with fresh coriander /fresh parsley & serve!
