Ing:
2 lbs of very thin slices of meat
Marinade for the meat
1 tbsp of brown sugar
1 tbsp hoison sauce
11/2 tbsp black vinegar
2 tbsp balsamic vinegar
1 tbsp of chilli paste
2 tbsp of soy sauce
1tbsp of sambal
1 tbsp of ginger and garlic
1 tbsp of green chutney
2 lbs of button mushrooms chopped and suated
4 large potatoes boiled
1 large anahime peppers chopped
2 tbsp chopped cilantro
salt
1/2 tsp of citric acid
Method:
Marinate the meat for about 20 minutes from the ingredient list and keep aside.
Mix the sauted mushrooms, potatoes, salt, citric acid, and chopped cilantro, make sure and do a taste test to make sure the taste is according to your pallet. Start by filling the meat slices with about a 1 tbsp of the potatoe mixture and roll them up, heat up a pan with about 2 tbsp of olive oil and pan fry the rolls, make sure and cover the pan for about 5 min so they steam on their own, next turn them around and cook until the meat is cooked through. A delicious rice that combines fried chicken and spinach!
Ing:
2 tbsp of oil you used to fry the chicken
1 onion sliced and fried (keep aside)
2 whole chicken cut cleaned and fried (keep aside)
21/2 cups chopped spinach
1 cup frozen peas
1 tbsp fresh dill weed chopped
1 tbsp ginger and garlic
1 tsp green chutney
salt to taste
1 1/2 cups rice soaked in water for 20 min
3 cups hot water
Method
Fry chicken and keep aside, soak rice and keep it aside, in a separate pot add the oil and let it warm up then add the green chutney and the ginger garlic, give it about 30 seconds for the flavors to infuse then add the spinach and dill week, saute this for a while and then go ahead and add the peas making sure you mix it all really well give it 2 minutes. Add the hot water let the water come to temp again in the mean time add the salt and to a taste test making sure that it is moderately salty. Water is not supposed to be boiling to add the rice, add the rice and let the water come to a boil, once it boils and the rice should start cooking, it should be half way done, next add the onions stir carefully making sure not to break the rice, next turn your stove on low and add the fried chicken again making sure to stir very carefully. Cover and put the lid on and cook for another 5 to 7 minutes. You can barbeque this rice with warming up the coal and adding the oil and cover again for a couple minutes.

Ing:
2 8oz blocks of cream cheese
1/2 tsp lemon pepper
1/3 tsp garlic powder
1/3 tsp onion powder
6 oz jarred jalapeno peppers and the juice
16 oz pack of frozen spinach (squeezed dry)
Method:
Start by putting the cream cheese in a food processor then add the jalapeno peppers and the juice blend it a little then go ahead and add the lemon pepper, onion powder, and the garlic powder as well as the squeezed spinach, blend all the ingredients one more time till everything has combined. Do a taste test to make sure it is perfect for you, spread on crackers, sandwiches , or just use it as a dip for vegetables and pretzels!

A delicious homemade fajita, that is easy to put together for a great back to school lunch or a simple snack!

1/4 green bell pepper cut in thin slices
1/4 red bell pepper cut in thin slices
1/4 yellow bell pepper cut in thin slices
1 small onion thinly sliced
enough chicken to make as many fajitas as you like
1 tsp ginger and garlic
1 tsp lemon pepper
1 tsp of black pepper
salt to taste
1/2 a lime
Tortillas as many as you need to make
Method:
First clean and cut the chicken in long slivers and keep it aside. In a frying pan add about 1 tbsp of olive oil and once hot add the vegetables and stir fry then keep that aside once the onions become a little translucent. Keep all this aside, then in the same pan add 1 tbsp of olive oil and add the chicken as well as the ginger, garlic, salt, pepper, and lemon pepper. Cook it until the juices run clean and splash it with half a lime juice. Start assembling the tortillas by warming the tortilla a little bit of vegetables as well as the chicken, add your favorite sauce and you have a healthy delicious homemade lunch or snack!
